During the day, sunlight travels through the atmosphere, and the small particles scatter the blue light more than the other colors. But when the sun is low on the horizon, like during sunrise and sunset, the light has to pass through more of the Earth's atmosphere. This causes the shorter blue and violet wavelengths to scatter out of your line of sight, leaving behind the reds and oranges!
